The Home of Pressure Profiling, Flow Control, and Endgame Espresso Gear
Vellutto| Wendougee | WPM
Are you the one quietly judging the espresso at dinner parties? Have you watched more shot-pulling videos than you will ever admit out loud? Have you got opinions about burr geometry? Well, welcome home! You are in the right place.
Vellutto is where coffee enthusiasts come once they have gone all in on Coffee. We're built around one quiet obsession: pressure profiling and flow control, the two things that turn a good espresso machine into the last one you'll ever need.
The Wendougee DATA S Espresso Machine is not just another espresso machine. In fact, it is designed for people who value ritual, control, and the satisfaction of pulling a meaningful shot.
It features a dual-boiler design, a saturated 316L stainless steel group head, and a quiet gear pump. Additionally, it offers app-based pressure and flow control. As a result, it delivers a more thoughtful espresso experience at home.
What Sets the Wendougee DATA S Apart
The Wendougee DATA S Espresso Machine balances instinct and precision. For example, you can keep things simple or fine-tune every shot using the E-bar app. Moreover, you can save your favorite profiles and reuse them anytime.
Furthermore, it uses Italian GICAR Flow meter, German WIKA Pressure Sensor and WIKA Pressure Gaugeallhigh-quality commercial grade components.
It also integrates with compatible grinders like the Wendougee MILO and ARES. Furthermore, it connects with scales such as BooKoo scales. Consequently, this enables brew-by-weight functionality and real-time data tracking.
The result is a smoother, more personal workflow that makes every coffee session more satisfying.
Who the Wendougee DATA S Is For
It is built for people who care about the cup, but also care about how the moment feels.
Indeed, it is the kind of machine that makes you slow down. Moreover, it invites you to pay attention and enjoy the process as much as the espresso itself.
For home baristas who have outgrown "good enough," the DATA S offers a more expressive way to brew. Ultimately, it delivers precision when you want control and convenience when you need simplicity. Thus, it brings café-level espresso into everyday life.
Nicknamed "The Mockingbird Machine"
Marko at Bella Barista calls the DATA S the "Mockingbird machine." That's because it can replicate virtually any espresso profile from other machines.
For instance, you can import shot parameters from machines like the Decent DE1 or Slayer. You can also import them from the La Marzocco Linea Mini or Profitec Pro 800. Then, you can run them on the DATA S.
Why choose the DATA S
Dual-boiler thermal control.
The DATA S is built around two independent boilers, one dedicated to brewing, one to steam, each managed by its own PID controller. That separation means brew temperature holds precisely where you set it, shot after shot, while steam pressure stays ready the moment you need it. The result is the kind of thermal consistency that turns great espresso into repeatable every day espresso.
Advanced pressure and flow profiling.
A commercial gear pump — the same class of pump found in professional bar machines — gives the DATA S smooth, linear command over pressure from pre-infusion all the way through the tail of the shot. Where vibratory pumps deliver a fixed, blunt push, the gear pump lets you shape each extraction: a soft bloom to open the bed, a peak pressure window to develop body and sweetness, a controlled taper to keep bitterness in check. That range of expression is what pressure profiling is actually for.
Saturated group head in 316L stainless steel.
The group head on the DATA S is fully saturated — constantly bathed in boiler water — so it reaches and holds brew temperature with minimal drift between shots. The 316L stainless steel construction resists corrosion and retains heat evenly, keeping the thermal environment around the puck stable even during back-to-back extractions.
E-Bar app ecosystem.
The DATA S connects to the Wendougee E-Bar app via Bluetooth, giving you a profile library, live pressure and flow curves, and integration with compatible grinders and scales. You can dial in a recipe once, save it, and recall it exactly, or use the data to understand why a shot tasted the way it did and adjust accordingly. The machine works without the app, the app just makes it work better and give full control.
Tank or direct plumb-in.
The DATA S supports both reservoir and direct water line connections, so it fits the practical reality of your kitchen, whether that means a countertop tank setup or a dedicated water line in a future renovation. Switching between the two requires no compromise on performance.
Choosing between the Fellow Espresso Series 1 and WPM Primus? The Primus offers a stainless body, quiet gear pump, higher brew temps and plumb‑in for long‑term, built for home baristas, while the Fellow Series 1 keeps things simpler with app‑guided profiles, a fast heat‑up vibration pump and a lower entry price—ideal as a first serious espresso machine.
Pressure and flow profiling let you precisely control how water moves through the coffee puck, reducing channeling and unlocking sweeter, more consistent espresso shots than a flat 9‑bar profile. When you combine smart profiles with good grind, dose, ratio and puck prep on a profiling‑ready machine, you apply modern espresso science at home for repeatable, café‑quality results.
Great latte art starts with the milk, not the pour. Master micro-foam in five moves: start cold, stretch with a hiss, spin a whirlpool, stop at 60°C, then tap and swirl. The science is simple — proteins wrap around air bubbles when heated just right. Get it dialed, and espresso becomes art.

What is a prosumer espresso machine?
A prosumer espresso machine sits between a domestic appliance and a full commercial machine. It uses commercial-grade components — rotary or gear pumps, dual boilers, PID temperature control, and 58mm portafilters — in a footprint sized for a home kitchen. Vellutto offer prosumer machines from Wendougee, WPM, Victoria Arduino, Rocket Espresso, and ACS.
What is pressure profiling and why does it matter?
Pressure profiling is the ability to vary pump pressure during an espresso shot rather than holding a flat 9 bar. A typical profile starts low for pre-infusion, ramps up, then tapers off at the end. The shape of that curve changes how a coffee tastes, lighter roasts usually benefit from a gentler peak and longer pre-infusion.
What is flow profiling, and how is it different from pressure profiling?
Flow profiling controls the volume of water passing through the puck per second, while pressure profiling controls the force pushing it. Flow tends to be more forgiving for dial-in because the pump corrects for small grind errors automatically. Pressure feels more intuitive if you've used lever machines.
What is a single dose grinder?
A single dose grinder grinds exactly the amount of coffee you're brewing, usually 14 to 22 grams, rather than holding a hopper full of beans. Retention is engineered close to zero, so the beans you weigh in are the beans that come out, with nothing mingling from yesterday's beans.
Should I upgrade my grinder or my espresso machine first?
The grinder. A great machine paired with a mediocre grinder produces mediocre coffee.
Which brands does Vellutto sell?
Vellutto offer Wendougee (DATA S, LITA BA, LITA LA, MILO Play), WPM (KONOS, ZP-1, Primus), Victoria Arduino (Eagle One Prima E1, E1 Prima Pro), Rocket Espresso, El Rocio (Ragen) It is being redesigned, and ACS (Vostok).
Do these machines run on standard EU power?
Every espresso machine and grinder from Vellutto is configured for 220–240V at 50Hz with a standard EU plug (Type F/Schuko). Most machines draw 1400W to 2800W at peak, which means the Standard 15A circuit in EU works fine.
